Oven Roasted Cod with Tomato, Quinoa, and Cucumber
- 2 cups Quinoa cooled to room temperature
- 2 tbsp. Zero Belly Vinaigrette
- ½ avocado, diced
- 1 cup packed baby spinach
- 1 cup cherry tomatoes, sliced in half
- ½ English cucumber, cut in half lengthwise, then sliced into two half moons.
- 1 lb. oven- roasted Pacific Cod
- Combine the salad ingredients in a large bowl. Mix well and divide among four plates
- Top each 4 ounces of oven-roasted cod.
