Oven Roasted Cod with Tomato, Quinoa, and Cucumber

Ingredients:Serves 4

  • 2 cups Quinoa cooled to room temperature
  • 2 tbsp. Zero Belly Vinaigrette
  • ½ avocado, diced
  • 1 cup packed baby spinach
  • 1 cup cherry tomatoes, sliced in half
  • ½ English cucumber, cut in half lengthwise, then sliced into two half moons.
  • 1 lb. oven- roasted Pacific Cod

Preparation:

  1. Combine the salad ingredients in a large bowl. Mix well and divide among four plates
  2. Top each 4 ounces of oven-roasted cod.
