Nicki: Ha—you have no idea how much time I’ve spent with that woman. “Betty” is my food processor.

Did “she” inspire you to write The Food Processor Family Cookbook?

Nicki: Well, I literally use her all the time.  This cookbook shows people how easy it is to use a food processor. There really is no better tool in the kitchen to make things from scratch.

What type of recipes to do you feature in the book?

Nicki:  I wanted to create recipes that are nutritious, wholesome, healthy, and delicious for the whole family. 

The food processor is not a “go-to” kitchen gadget for most people, why not?

Nicki:   Because it’s intimidating.  The idea of cleaning it, trips people out.  I time tested grating cheese on my hand grater versus the food processor.  It took five minutes by hand and thirty seconds using my food processor and less than a minute to wash it out.

What’s the quickest and easiest way to clean a food processor?

Nicki:  Soak the blade in hot soapy water while you’re cooking other things or do it right away—it takes 30 seconds and it’s done—on your dish rack.

Name your top three meals?

Nicki: Every week I do pasta. My kids LOVE it.  It’s one of my full-proof ways of getting my kid to eat vegetables, they’ll eat anything in a pasta sauce.  Soup is a favorite and so is Mexican. I’ll put anything in a taco.

How old are your kids?

Nicki: I have a 1 and 6 year-old.

What advice would you give to busy moms who want to cook healthier meals for their family?

Nicki: Always plan ahead. Make a menu for the week and stick with it. I always buy the things on my grocery list because I hate throwing away food.  Cooking from scratch is a commitment, but also very enjoyable.

Any dinner planning tips?

Nicki:  A lot of the times I will eat breakfast and do something as simple as making the salad dressing or chopping vegetables. One simple step really goes a long way.

What is always in your fridge?

Nicki: Greens

And, what would you never find in your fridge?

Nicki: You’ll NEVER find soda.

If “Betty” didn’t exist, what would be your next kitchen bestie(s)?

Nicki:  Good-quality pots & pans.
